Kikusui “Sakamai Kikusui” Junmai Daiginjo Genshu is a rare and historic expression from Niigata’s own Kikusui Sake Company, crafted from a nearly extinct heirloom rice revived against the odds. First developed in 1937 from a lineage of rice called Kikusui, it had all but vanished by the 1990s but was saved by a painstaking revival effort that began with just 25 remaining grains! Polished to 40% and fermented with Yeast No. 1901, this genshu (undiluted) sake showcases the full potential of this unique rice. The style is light typical of Niigata, yet full-bodied, offering concentrated notes of ripe apple, mango, and a subtle umami maturity. As a Junmai Daiginjo Genshu, it balances elegance with richness, ideal for pairing with aged cheeses or delicate seafood.
