We have a rare fine from Thierry Pillot, the son of esteemed winemaker Paul Pillot, today, who has been managing Domaine Paul Pillot since 2004. Located in Chassagne-Montrachet, the estate spans approximately 13 hectares, primarily focused on Chardonnay and Pinot Noir. Thierry emphasizes minimal intervention in the vineyard and cellar, practicing organic farming, hand-harvesting, and using natural yeasts. His winemaking style is characterized by precision, balance, and a clear expression of terroir with limited new oak. While he continues to make the wines at Paul Pillot, he also bottles a few wines under his own mico negociant label from a handful of excellent vineyards in both red and white, which come from heavily vetted organic growers that pass Theirrys quality standards. One such example is the Saint Aubin Le Ban, and while it's not a Chassagne wine, Theirry has experience with Saint-Aubin as they bottle a few cuvees at Domaine Paul Pillot and is a fantastic example of this slightly cooler terroir at a great price. This is from 44+-year-old vines that are vinified in older oak with 12 months of barrel aging and an additional 6 months in tank before bottling. Only a few barrels are made of this wine, and it's a great look at the work of Theirry, whose wines are every bit as good as his family estates.
