A Champagne that we don't often offer unless the pricing is reasonable, which is the case here. The Special Cuvee is a blend of 60% Pinot Noir, 25% Chardonnay, 15% Meunier 85% of which are Grands and Premiers crus. A significant portion of the Cuvee Special is dedicated to reserve wine, and instead of it being held in a tank, Bollinger ages the reserve wines for this Cuvee in Magnums, which have been resting for 5 to 15 years. Another key to the beauty of this Cuvee is that it is aged for twice the required time by law for a non-vintage Champagne. This is an aromatically complex Champagne with excellent ripe fruit, spice, and minerals with a structured, long, and energetic palate. Because of the large amount of reserve wine and extended aging, this Champagne can be enjoyed now and is excellent with different types of seafood, cheeses, cured meats, and as a serious aperitif.
